Cheesy Cauliflower Breadsticks are low carb, gluten free and grain free. Low carb never tasted so good!

Caution: Prepare to have your mind blown as I introduce you to Cheesy Cauliflower “Bread” Sticks. Please don’t click the little “x” to close this window, just stick with me on this one for just a few minutes, especially if you’re following a low carb or keto diet.

Have you ever tried cauliflower Pizza? I did several months ago, and I sort of dismissed it and figured it HAD to be too good to be true. I didn’t want to be disappointed, but I just figured there was no way on this Earth that cauliflower could pass as a crust for pizza, and a decent crust no less!

But then I decided it was worth my time and effort to experiment with “Cauliflower” used in place of bread to see what all the hype was about. It did not disappoint. I hope you love these low carb, keto, gluten free and grain free breadsticks as much as I do!

Cauliflower Breadstick Ingredients

To make low carb cauliflower breadsticks, you’ll need a few ingredients including the star of the show – cauliflower!

  1. Cauliflower – you’ll need to rice a head of cauliflower. Details on how to do this are below. Alternatively you can buy riced cauliflower from the grocery store in either the frozen section or the produce section.
  2. Egg – this will help bind the “bread”sticks together
  3. Mozzarella cheese
  4. Seasonings – we are using oregano, basil, salt and Italian seasoning
  5. Marinara Sauce – for dipping of course!

How to make cauliflower breadsticks

The full written instructions including ingredient amounts can be found below. Here are some tips and tricks to help you perfect this recipe.

  1. Ricing cauliflower – wash and clean the cauliflower and cut it into chunks (remove the core). There are several ways to “rice” cauliflower. You can use a food processor and pulse it until it’s a “rice” consistency, or you can use a box grater. Alternatively, you could use a knife to finally chop the cauliflower until it looks like rice. An average head of cauliflower should yield about 4 cups of cauliflower “rice.”
  2. Cook the cauliflower – you will steam the cauliflower rice in a large saucepan until it’s tender. This is a very quick 4-5 minute process.
  3. Drain and squeeze out excess moisture – this is a very important step. If you don’t remove as much moisture as possible, these will not turn out well. Drain the cauliflower using a fine mesh strainer, then use a clean kitchen towel to squeeze out excess moisture. Repeat this step a few times to ensure that all of the moisture is out. You want crispy breadsticks which is only achievable with the moisture removed!
  4. Combine the ingredients – cauliflower rice, ½ o the mozzarella cheese, an egg and seasonings all come together to create the “dough.”
  5. Shape the breadsticks – you will form the “dough” into a rectangle roughly the size of a piece of paper.
  6. Bake – 400 degrees F for 35-40 minutes. Be sure to line the rimmed baking sheet with parchment paper.
  7. Add toppings – add the remaining mozzarella cheese along with Italian seasoning to the breadsticks, then bake for 7-10 minutes longer.
  8. Cut into breadsticks – cut the rectangle into breadsticks and serve with marinara

How to make crispy cauliflower breadsticks

The key to get the breadsticks to be crispy is to drain the cauliflower really well. This is the most important step!

I’m telling you, low carbin’ it never tasted so good! If you’re feeling a little adventurous, seriously give this a try! It’s low carb, gluten free, and grain free. Awwweeeesome!

One recipe makes an 8×11 inch rectangle which can be cut into as many breadsticks as you’d like. Be sure to serve with warm marinara sauce.

Cheesy Cauliflower Breadsticks

Prep Time: 15 minutes
Cook Time: 50 minutes

Ingredients 

  • 4 cups riced cauliflower
  • 1 egg slightly beaten
  • 2 cups mozzarella cheese, shredded, divided
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ¼ tsp salt
  • ½ tsp Italian seasoning
  • Marinara sauce for dipping

Instructions 

  • Begin by ricing your cauliflower. See explanation above for tips and tricks. You should have about 4 cups of cauliflower "rice" from one head of cauliflower.
  • In a large saucepan, heat one inch of water until it boils. Add in the cauliflower rice, cover with a lid, and allow it to steam for 4-5 minutes.
  • Preheat oven to 400 degrees F.
  • Use a fine mesh strainer to drain the cauliflower. Allow it to cool for a few minutes, then place the cauliflower “rice” in a clean dish towel and squeeze as hard as you can to remove any excess water. It may look like all the water is removed, but definitely don’t skip this step as there is hidden excess water.
  • Once the cauliflower rice is drained really well, dump it into a large bowl. To the cauliflower rice, add 1 cup mozzarella cheese, 1 egg slightly beaten, 1 teaspoon dried oregano, 1 teaspoon dried basil, and 1/4 teaspoon salt. Stir well.
  • Line a rimmed baking sheet with parchment paper and spray it lightly with cooking spray. Spoon the cauliflower mixture onto the pan and use your hands to form it into a 8 1/2 x 11 inch rectangle (eyeball it- think piece of paper size)
  • Place in the oven for 35-40 minutes, or even longer until the crust is golden brown and firm.
  • Remove the crust from the oven and allow it to cool for about 10 minutes. Then top the crust with remaining 1 cup shredded mozzarella cheese, and 1/2 teaspoon Italian Seasoning.
  • Return the pan to the oven and bake for another 7-10 minutes, or until the cheese is melted.
  • Cut into “breadsticks” and serve with warm marinara sauce for dipping.
